Make it Virginia Made with Henry Hill Jr.

Welcome to the “Make it Virginia-Made” series, where we travel across the commonwealth to visit restaurants serving up Virginia spirits. These top-notch establishments and bartenders have a commitment to quality, local brands, understanding any cocktail — from fruity to sour to spirit-forward — can be Virginia-made. And it not only can be Virginia-made, it can be better Virginia-made.

You may have seen our lively host Henry Hill, Jr., a.k.a. the winner of The 2024 Virginia Cocktail Games, sitting down with a local bartender on our @VaSpirits Instagram. Here, we’re giving you the full download on what you saw and didn’t see during the visit. You’re about to learn about what makes this restaurant so special – so, get comfy and grab a drink – or better yet, head over to Monsoon Siam and sip for yourself.

Get to Know Monsoon Siam

Since opening in 2011, Monsoon Siam has become a beloved staple in downtown Charlottesville, known for its cozy, welcoming vibe and its commitment to authentic Thai cuisine.

Owner Kitty Ashi, a Thai immigrant who arrived in the U.S. in 2006 with just $500, built the restaurant from the ground up, creating a place where guests can relax and enjoy food that feels both comforting and adventurous. The menu blends classic Thai flavors with creative touches, featuring favorites like Pad Thai, Tom Yum noodle soup, and the highly recommended Ka Pow Mince Chicken, alongside an array of vegetarian-friendly dishes — all at approachable prices.

Kitty’s culinary talent has gained national attention, including a February 2025 appearance on the Food Network’s Chopped “Thai Takedown!” episode, where she showcased her skill and creativity on a national stage.

The atmosphere is as inviting as the food. In summer, guests can enjoy one of downtown’s most charming patios — a shady, laid-back spot overlooking Market Street — while winter dining moves indoors to a colorful, eclectic space adorned with art and furniture created by employees and friends over the years. This focus on community and creativity extends to the bar, where Monsoon Siam’s cocktails often feature Virginia-made spirits, embracing the local producers and artisans that make Charlottesville unique.

Ling ChettaWho’s Behind the Bar

If you ask for a drink here, you might just run into Ling Chetta, who began his bartending journey in 2015 in San Francisco. Five years later, he accepted an invitation from Monsoon Siam owner Kitty Ashi to move to Charlottesville and help manage the restaurant, including its beverage program. Their successful partnership has since grown beyond Monsoon Siam, culminating in the recent opening of Camellia’s Bar and Roastery. Always bringing his passion for innovative drinks and community-focused hospitality to each new venture.

What do you think is unique about making cocktails with locally made spirits?

“When both locals and visitors come to the restaurant, they ask for locally made spirits. And as a restaurant that has been supported by this small town [Charlottesville], it’s just the right thing to do — support other local businesses. I have a lot of Virginia pride and want to incorporate that into our menu.”

What do you enjoy about blending the flavors of the food and the cocktail?

“I look for opportunities to incorporate Thai elements. When the customers take a sip, I want them to notice and think, ‘Oh, these flavors are similar to a Thai dish that I love.’”
