Hollow Folk

Ingredients:

  • 1.5 oz Belmont Farm Special Reserve 10 Year 
  • 0.75 oz rich peach syrup*
  • 0.5 oz Amaro (e.g. Averna) 

Preparation:

Combine all ingredients in a cocktail mixing glass with ice and stir for 15 seconds. Strain into a chilled Nick & Nora glass, garnish with a fresh sage leaf, and enjoy.

*Rich Peach Syrup

  • 300 g cubed peaches
  • 300 g cane sugar
  • 150 g water

In a saucepan, cook peaches on medium heat just until juices begin to bubble. Add sugar and water and stir until sugar is dissolved. Reduce heat to low and let peaches simmer for 30 minutes. Remove peaches with a slotted spoon (and enjoy as a tasty treat). Fine strain the remaining liquid to remove any solids and store in a bottle in the refrigerator for up to a month.
