Shenandoah Shrub-berry
Ingredients:
2oz Cirrus Vodka
1oz foraged berry & thyme shrub*
0.5 oz ginger wort**
0.5 oz lemon
Foraged Berry and Thyme Shrub*
- 2 cups fresh, whole berries
- 2 cups apple cider vinegar
- 1 1/2 cups granulated sugar
Ginger Wort**
- 3 cups water
- 1 cup fresh minced ginger
- 1 ½ ounces light brown sugar
- ¾ ounce fresh lime juice
Preparation:
Combine the fruit and vinegar in a large jar, tightly screw on the lid, and shake vigorously for 10 seconds. Let infuse for one week at room temperature, shaking daily. Strain the juice through a double layer of cheesecloth and funnel into a clean glass bottle. Add sugar and shake to combine. Refrigerate for one week before using, shaking daily until sugar has fully dissolved. Use within 2-3 weeks.
Ginger Wort:
Bring the water to a boil, then pour over ginger and sugar in shatter-resistant, nonreactive container (like glass, ceramic, or stainless steel). Cover for 90 minutes, then strain through a fine mesh strainer, pressing the ginger to extract as much liquid as possible. Finally, add the lime juice, bottle, and refrigerate. Use within 2-3 weeks.
