presented by Christine Gregory, Fin Seafood

Ingredients:

2 oz Ironclad small batch bourbon

1 oz fresh lime juice

1 oz strawberry puree

1 oz balsamic simple syrup*

2 oz ginger beer

crushed ice

*Balsamic simple syrup

1 cup water

1.5 cups brown sugar

1 cup Balsamic vinegar

Preparation:

Add bourbon, fresh lime juice, sweetened strawberry puree and balsamic simple syrup to a cocktail shaker.  Shake and double strain over crushed ice in a Collins glass. Top with ginger beer and garnish with a fresh mint sprig and skewered strawberry halves on a cocktail pick.

Balsamic Simple Syrup:

Combine liquid ingredients in a medium saucepan, then add sugar and stir over medium-high heat until the sugar dissolves. Bring to a boil, then reduce heat and simmer for several minutes. Allow to cool, then transfer to a food safe container and refrigerate. Lasts several weeks.
