Virginia Sunryes

Ingredients:

Base Cocktail:

1.5 oz Filibuster Rye

4 dashes orange bitters

0.75 ounce fresh lemon juice

0.5 ounce maple syrup

0.5 ounce smoky Mezcal

 

Red Wine Foam:

0.25 oz egg white (or vegan equivalent, like aqua faba or foaming agent)

0.5 ounce fresh lemon juice

1 ounce Cabernet Franc

Preparation:

Combine base cocktail ingredients in a cocktail shaker with ice and shake vigorously until the drink is properly chilled and diluted. Strain this cocktail into a chilled rocks glass with fresh ice. In a separate cocktail shaker combine your .25 ounce of egg white, .5 ounce of fresh lemon juice and 1 ounce of the Cabernet Franc – Dry shake these ingredients vigorously to incorporate and froth the egg white. Add ice and shake again to chill and further froth the egg white. Layer the foam on top of the cocktail. Garnish with a dehydrated orange wheel.
