(Eye of the) Tiger’s Blood

Ingredients:

  • 1.5 oz Appalachian Heritage Gin
  • 1.5 oz fresh lemon juice
  • 1 oz pineapple juice
  • 2.5 oz summer fruit syrup*
  • 0.25 oz maraschino liqueur
  • 0.25 oz yellow Italian herbal liqueur
  • Garnish: thin frozen watermelon wedge and strawberry slivers

Preparation:

*To make the summer fruit syrup, combine 1 oz of watermelon puree, 1 oz strawberry puree, and a half oz of coconut creme(coco lopez or similar). Add a drop of coconut extract and around a half gram of citric acid to stabilize and bring balance.

To make the purees, use frozen watermelon (rind trimmed off) and cored strawberries with a 4:1 ratio of fruit to granulated white sugar blended on medium speed until liquid.

To batch the syrup, combine 1000 ml each of watermelon and strawberry purees, 500ml of coconut puree, 1 oz of coconut extract, and 1 measured oz [BY WEIGHT?} of citric acid to a blender. Blend at medium speed for 30 seconds so as to not cook the puree. Store in an airtight container and keep refrigerated for up to 1 month.

Combine all ingredients into a shaker tin with no ice, (dry) shake several times to blend and pour over shaved ice in a hurricane glass. Garnish with thin frozen watermelon wedge and strawberry slivers.
