Spirits Lab Distilling is the oldest legal distillery in Charlottesville, Virginia, founded and operated by Sarah and Ivar Aass. As a true craft distillery, all spirits are distilled on-site using a 300-liter Portuguese pot still, with no sourced products—ensuring every bottle is made with care, integrity, and creativity.
