Pour l’amour du Gin

Ingredients:
- 1.5 oz Devils Backbone Foxfield Gin
- 1.5 oz Flying Fox Fall Vermouth
- 0.5 oz fresh lemon juice
- 0.25 oz simple syrup
- 0.25 oz Italian bergamot liqueur
- 1 egg white (or equivalent)
- Rosehip and white peppercorn bitters
- Garnish: Lemon twist
Preparation:
Combine lemon juice and egg white into a shaker and dry shake for 15 seconds to break down egg proteins. Then, add gin, vermouth, simple syrup, and Italian bergamot liqueur and dry shake again for 15 seconds. Add ice to the shaker and briefly wet shake all ingredients to chill the drink. Double strain into a chilled coupe glass. Top the foam on the drink with 4 drops of bitters (drag toothpick through to create a beautiful visual design). Lastly, take a fresh lemon twist and express its aromatic oils over the drink and gently rub around the rim of the coupe, then rest the lemon twist on the edge of the glass and enjoy.
